I think you and I are long overdue for a coffee date to catch up on life! If we were going out for coffee, I’d bring you to one of my favorite spots in Hawaii. I’d order an iced coffee and load it up with cream.

If we were having coffee, I’d ask you what you’re reading right now. I just finished reading Kitchen Confidential by Anthony Bourdain. Nick gave it to me for my birthday – he knows me well! His stories are completely insane and I loved them. I particularly loved his chapter dedicated to a typical “day in the life” – I have a complete new respect for anyone who works in a kitchen.

Now I want Nick to read it, because he was a cook when he was in high school, and I have a feeling he would appreciate it. Also, Nick just loves to cook and all things related to food, and Bourdain goes into great detail describing ingredients, the way he makes certain dishes, and describing the best meal he’s ever had. However, I can’t help myself from telling Nick pretty much every single detail in the book, so he might feel like he doesn’t even need to read it. Oops.

I’d ask you what you’ve been up to lately, and then I would tell you that for the past two weeks, I’ve been hanging out with my friend Erinn, who came all the way from Boston to visit! Erinn and I met when we were just under a year old and have been friends ever since. We had a blast going around Oahu, hiking, snorkeling, and eating. We even took a trip over to Kauai for a few days, where we stayed in a legit treehouse!

It’s so much fun to have a friend who you have known your entire life. We spent the entire two weeks laughing.

I took her to all of my favorite places, and we discovered so many new ones together. No matter how long I’ve been in Hawaii, whenever someone comes to visit, we always end up doing something fun and new. I love that everyone has different ideas of things they want to see and do and that I end up doing things I’ve never done before. I’m going to be writing more about her visit soon!

At this point in our coffee date, I would probaly try to convince you to split a brownie or scone with me.

I’d also tell you that Nick is currently on a break from school. He took 3 finals in one day (how crazy is that?!).

Now he is just 8 credits away from his MBA! He has a few weeks off and then starts his last round of classes in July. In September he will be completely done! The past year and a half has been hard on him. Between working full time and being in school more than full time, he has not has much free time or sleep. He’s been taking extra classes so that he can finish early, which has been rough but I think it will be worth it when he’s completely done ahead of schedule.

Since Nick has been on break from school, he’s been cooking the most amazing dinners. I am so looking forward to more of these dinners when he’s done with school!!

If we were having coffee, I’d tell you that I’m in the middle of the most jam-packed summer I ever could have imagined, a summer that will include two trips to the mainland, a wedding, and loads of visitors. I love it all.

Now, I would have to cut our coffee date short, because my sister-in-law is coming to visit today, and I have to go pick her up from the airport right now!!! It’s been a whole year since I have seen her, and I can’t wait to give her a hug!

    I didn’t know Nick was a cook in high school! How fun! I feel like his MBA program is flying by! Have fun with your sister-in-law!

      He says it was the most fun job he’s ever had, and now I get all of the benefits of everything he learned! So it was the perfect job for him! I can’t believe how fast time is flying! I can’t wait for him to have more free time.
